Cajun Russian Chicken Hero (Organic)

Juicy organic grilled chicken, melted mozzarella, shredded lettuce, and crisp white onion, finished with a zesty Russian‑dressing + Cajun + cayenne kick on a warm white hero.

Ingredients (All Organic)

Chicken & Seasoning

  • 2 small chicken breasts (pounded to ½‑inch even thickness)

  • 1 Tbsp olive oil

  • 1 tsp Cajun seasoning

  • ¼–½ tsp cayenne pepper (to taste)

  • ½ tsp garlic powder

  • ½ tsp fine sea salt, ¼ tsp black pepper

Cajun‑Russian Sauce

  • 3 Tbsp Russian dressing (store‑bought organic or mayo+ketchup+relish base)

  • ½ tsp Cajun seasoning

  • Pinch cayenne (optional, for extra heat)

  • Squeeze lemon (optional, to brighten)

Build

  • 1 large white hero roll (12–14 in) or two 6–7 in subs

  • 6–8 oz low‑moisture mozzarella, sliced

  • 2 cups shredded lettuce

  • ½ small white onion, thinly sliced

  • Olive oil for toasting bread

  • Flaky salt & pepper, to taste


Directions

  1. Season & Grill

    • Toss chicken with olive oil, Cajun, cayenne, garlic powder, salt, and pepper.

    • Grill over medium‑high 5–6 minutes per side (to 165°F). Rest 5 minutes, then slice on the bias.

  2. Mix the Sauce

    • Stir Russian dressing with Cajun, a pinch of cayenne, and a squeeze of lemon.

  3. Toast & Melt

    • Brush cut sides of the hero with olive oil and toast until golden.

    • Lay sliced mozzarella over the bottom half; return to heat briefly to melt.

  4. Build the Hero

    • Spread sauce on both sides.

    • Add lettuce and white onion, pile on the sliced chicken, drizzle a touch more sauce, season lightly, close and slice.
